²  To Maintain efficient and good service

SUPERVISOR

²  Coordinates
²  Assist manager’s job
²  Supervises and/or controls the work of other employed waiting staff.
²  Service for custromers

KITCHEN HAND
²  Cleans cooking utensils
²  Assists cooks in the preparation of food or cooking
²  Maintains the standards of cleanliness in the working area as determined by management.

CATERER’S ASSISTANT

²  Involves portioning and preparing fresh food, setting, clearing and cleaning of tables and equipment.
²  Taking reservations.
²  Preparing the restaurant.
²  Greeting the customers.
²  Promoting food and beverage.
²  Liaising with kitchen.
²  Farewelling guests.
²  Stocking and control.

BAR ATTENDANT

²  Preparing and serving a range of drinks.
²  Maintaining cleanliness of all surfaces, equipment and glassware.
²  Payment handling.
²  Greeting.
²  Farewelling.
²  Restocking.
²  Opening and closing procedures.
²  Making recommendations and selling.
²  Prepares, mixes and dispenses drinks including cocktails and specialist alcoholic beverages.
²  Coffee making

WAITER/WAITRESS

To responsible for all duties,mainly to serve food and beverages and to ensure to meets the expectation of our customer
²  Preparation
²  Receives customers
²  Promoting food and beverage.
²  Takes and checks bookings and receives payment for food and beverage. 
²  Takes orders and delivers to the customer, cleans and clears tables and performs supplementary duties in kitchen functions.
²  In addition to the above, a specialist is required to carve or cook in the dining room or at the table.
²  Payment handling.
²  Dispenses alcoholic and non-alcoholic beverages at the request of the waiting staff or customer’s order.
²  Work according to instruction given or work schedule
²  Report any work,wearing clean uniform at all times
²  Have fully understanding of the restaurant’s operation policies and procedures
²  Farewelling guests.
²  Participation in staff traning and other program
²  Maintaining a good teamwork relationship with staff
²  Maintaining high standard of personal appearance and hygiene at all times

SECURITY PERSONNAL

²  Drives, parks, and returns customers’ cars from public parking areas outside of the café/restaurant premises.

JOB CLASSIFICATIONS


GRADE 1/LEVEL 1
DUTIES
An employee who is engaged in any of the following:
²  Picking up empty glasses.
²  Emptying ashtrays.
²  General assistance to food & beverage attendants of a higher grade, not including service to customers.
²  Removing food plates.
²  Setting and/or wiping down tables.
²  Cleaning and tidying of associated areas.

TRAINING

GRADE 2/LEVEL 2
An employee who has not achieved the appropriate level of training and who is engaged in any of the following:
²  Supplying, dispensing or mixing of liquor including the sale of liquor from the bottle department.
²  Assisting in the cellar of the bottle department.
²  Undertaking general waiting duties of both food and/or beverage, including cleaning of tables.
²  Receipt of money.
²  Engaged on a snack bar.
²  Engaged on delivery duties.
TRAINING
²  Introduction to Food & Beverage
²  The Hospitality Sector
²  Food Production – the Kitchen
²  Interpersonal Skills
²  Occupational Hygiene
²  Customer Relations

GRADE 3/LEVEL 3

An employee who has the appropriate level of training and is engaged in any of the following:

²  Supplying, dispensing or mixing of liquor including sale of liquor from the bottle department.
²  Assisting in the cellar of bottle department, where duties could including working up to four hours per day (averaged over the relevant work cycle) in the cellar without supervision.
²  Receipt of money.
²  Taking reservations, greeting and seating guests.
²  Assisting in the training and supervision of food and beverage attendants of a lower grade.
²  Engaged on delivery duties.
²  Attending a TAB and/or Lotteries Commission terminal. 
²  Operation of a mechanical lifting device.


TRAINING
²  Occupational Safety, Security & First Aid
²  Completion of a traineeship, or the above modules, plus:
²  Plus choice of three of the following, one of which must be related to job:
²  Bars & Service of Drinks
²  Restaurant: Preparing For Service
²  Restaurant Service

²  One to One Job Instruction

GRADE 4/LEVEL 4

An employee who has the appropriate level of training and is engaged in any of the following:
²  Full control of cellar or liquor store (including the receipt, delivery and recording of goods within such an area).
²  Mixing a range of sophisticated drinks.
²  Supervising food & beverage attendants of a lower grade.

An employee who has the appropriate level of training in waiting or who has passed the appropriate trade test and as such carries out specialised skilled duties in a free dining room or restaurant.
